Why the Quality of Your Cacao Matters

Most of us have tasted chocolate our whole lives yet never tasted cacao. They sound like the same thing but they are not. 

When you understand what real ceremonial cacao is, and what happens to it on the way to the cup, you start to see why quality is not a luxury here. It is the thing that decides whether your cacao genuinely nourishes your body, or whether, in its hot chocolate form we all know so well, it tastes good for a moment but leaves little behind.

What ceremonial cacao actually is

Ceremonial cacao is the bean in its truest form - whole, raw, minimally processed, and kept close to how it grows. Nothing stripped out for shelf life, nothing added to make it cheaper or sweeter. Just the cacao, as it was always meant to reach you.

Cacaopura is 100% raw ceremonial-grade Criollo, the rarest and most prized variety, ethically sourced from Peru in partnership with the Asháninka people. It is pressed into smooth coins that melt gently into your cup. Single ingredient, with nothing added or taken away.

Our coins are made the same way ceremonial cacao has always been made. The whole bean is processed exactly as it would be for a traditional block, then portioned into coins rather than left in one large piece. 

What processing destroys

The journey from bean to commercial chocolate involves high heat, alkalisation, and refining, and each of those steps strips out cacao butter which makes cacao worth drinking in the first place. The flavanols and polyphenols that nourish you at a cellular level are significantly reduced or destroyed, the minerals thin out, and the compounds that give cacao its felt effect are dialled down until what is left is sweet, smooth, and hollow.

Then come the additions. To make that processed cacao taste good again, sugar is added, usually a lot of it, along with milk solids, emulsifiers, and often vegetable fats or flavourings. The bean ends up as a minor ingredient in something built mostly from everything that joined it later.

Raw ceremonial cacao is the opposite on both counts. Nothing is stripped out and nothing is added in. It keeps what commercial chocolate loses, the flavanols, the polyphenols, the magnesium, iron, potassium and zinc, all of it there in the bean to begin with rather than poured in afterwards.

The compounds you can feel

The difference here is not something you have to take on trust. You taste it, and more than that, you feel it.

Theobromine is the gentle lift in cacao, widening blood flow and bringing a soft alertness without the spike and crash you get from caffeine. Most people describe it as feeling alert and calm at the same time, which is a rare combination, and it tends to stay with you rather than dropping an hour later.

Then there is anandamide, often called the bliss molecule, alongside PEA, which is associated with feelings of warmth and connection. Together they are usually behind that small softening you notice after the first sip - a sense of being a little more open and at ease than you were a moment before.

And there is magnesium, which cacao holds in one of the highest plant-based concentrations you will find anywhere. It is the relaxation mineral, the one that leaves your nervous system feeling held rather than wired.

These are exactly the things that thin out or disappear in cheaper, heavily processed cacao you can find on the supermarket shelves or in most cafes. Quality, is what keeps all the ingredients in your cup.

Why the indulgence is the point, not the compromise

There is a belief many of us carry without ever quite examining it - that anything genuinely good for us has to be a little joyless, as though nourishment and pleasure sit on opposite sides of the table.

Real ceremonial cacao undoes that. It tastes like something you shouldn't be allowed to have everyday, smooth, rich and deeply indulgent, it also happens to be one of the most nourishing things you can drink.

Indulgent and genuinely good for you. Both are true. That is only possible when the cacao is whole - when the richness comes from the bean rather than from sugar added to it.

The real reason quality matters is that it is what keeps you coming back to the cup. Cacao gives the most when you drink it regularly, the felt benefits building gradually over time, which only works if you actually keep it up.
